If you like appetizers, you'll love this Black Bean Jalapeno Dip. This bean dip is so yummy and flavorful, you won't believe it isn't packed with calories! It is one of my favorite healthy recipes.
Don't drain or rinse the black beans. Puree them (with their liquid) until smooth. Measure about ⅔ cup of the puree.
Mix the ⅔ cup of the puree with the rest of the ingredients. Serve with pretzels, crackers, veggies, or whatever you like to dip!
I typically puree the entire can of black beans, and then use some of the puree for my decadent Dark Chocolate Black Bean Brownies, and the rest for this recipe. If you want to use the whole can of black beans just for this recipe, you will need to double the amounts of the other ingredients (approximately).
IMPORTANT! Based on feedback I received from readers, not all canned black beans are the same! Some seem to have more liquid than others. I used Goya brand, which does not have a lot of liquid, and what it does have is rather thick and not watery. So if your dip turns out too runny, try using Goya.
